This is super easy and delicious. The "secret ingredient" is tahini (sesame seed paste). The tahini adds protein and gives the soup a wonderful richness.
Ingredients
16 oz bag frozen broccoli
4 medium potatoes, peeled and cubed
1 small onion, cubed
3 carrots, peeled and sliced
3 celery stalks, sliced
1 quart chicken stock (can use veggie stock or water)
2 tablespoons tahini
salt and pepper to taste
bring potatoes, onion, carrots, celery in stock to a boil, then simmer until vegetables are tender. Add broccoli until tender. Add salt and pepper to taste. Once vegetables are cooked, remove from heat and let cool a bit before stirring in tahini. Blend in food processor/blender.
